Bran Muffins

Preheat oven to 350°

Mix:

  • 1 1/4 cups water
  • 1 cup malt syrup
  • 1/4 cup oil
  • 1/2 tsp vanilla (optional, as is everything else.)

Mix separately:

  • 2 cups bran
  • 1 cup w.w. flour
  • 1/4 cup cornmeal
  • 1/4 cup poppy seeds
  • 1/4 cup raisins
  • 2 tsp baking powder
  • 1 tsp kelp
  • 1 tsp cinnamon
  • 1/8 tsp mace

Pour dry into wet.

Mix evenly.

Scoop into oiled or papered muffin tins.

Bake until well-browned, firm on top, about 30 minutes

Makes one dozen.
